1 small Yellow Pepper
2 Eggs (whisked)
3 cups Bean Sprouts
1/2 Cup Peanuts (roasted and coarsely chopped)
1/2 Cup Cilantro (finely chopped)
1/2 Lime Cut into 4 Wedges
COOKING INSTRUCTIONS:
1. Bake or Pan Fry Tofu until Golden Brown.
2.Put 5 cups of water to a full boil. Place rice noodles in a bowl and pour hot water over. Put stainless fork so the noodles would separate and wouldn’t stick to each other.
3.Soak noodles for 10minutes and drain.
4.Cut the white portion of scallions into thin strips. Dice the green part of the scallions and pepper. Cook for 2 minutes as the garlic becomes aromatic. Push veggies on one side of the pan. Pour egg and scramble until cooked.
6.Add cooked noodles, baked tofu and Asian Home Gourmet Thai Pad Thai Noodle Spice Paste mixture. Mix well, toss the noodles well until sauce is absorbed by the noodles. Cook 2-3mins or until the noodles are heated through.
7.Add bean sprouts, add half chopped green scallions, half of the peanuts and half of the cilantro. Toss through quickly and remove from heat.
8.Add remaining scallions, peanuts, cilantro, and lime wedges. Serve hot. Share and enjoy!
