Ingredients:
- 1 package Real Thai Pad Thai Paste
- 8 ounces rice noodles
- 2 large eggs
- 4 ounces tofu, cubed
- 1/2 cup chopped peanuts
- 1/4 cup chopped green onions
- 1 tablespoon lime juice
Instructions:
- Soak the rice noodles in warm water for 30 minutes, or according to package instructions.
- In a large skillet, heat a tablespoon of oil over medium-high heat.
- Add the eggs and scramble until cooked. Remove from the skillet and set aside.
- Add the Pad Thai paste to the skillet and cook for 1 minute.
- Add the cooked rice noodles and toss to coat with the paste.
- Add the tofu and cook for 2-3 minutes, or until heated through.
- Stir in the scrambled eggs, peanuts, and green onions.
- Toss to combine.
- Just before serving, squeeze the lime juice over the Pad Thai.
